Made from agave salmiana, a majestic variety that grows semi-wild in the semi-arid highlands of San Luis Potosí, Clase Azul Mezcal San Luis Potosí is the pure expression of a little-known region, rich in tradition and uniqueness. This agave, also known as ‘verde’ for its brilliant hue, takes almost fifteen years to reach maturity, absorbing the minerals of the volcanic soil and the essence of the desert climate over time.

Carefully harvested by experienced jimadores, the piñas of agave salmiana are slowly cooked in stone masonry ovens, revealing unique vegetal and earthy notes, quite different from the smokier profiles of other mezcals. Once cooked, they are mechanically crushed, then the juice is left to ferment naturally in open vats, where the indigenous yeast gives rise to sweet, herbaceous aromas.

Distilled with precision in a copper still, this mezcal reveals a delicate structure, where vegetal freshness, touches of wild mint, hints of green apple, ripe pear and a hint of aniseed balance each other harmoniously. This is a bright, subtle mezcal that is surprisingly accessible, while retaining the depth of its region of origin.
